Chicken Fiesta Dip

Barb's Chicken Fiesta Dip

(I will post a picture of this soon but it is a favorite tried and true recipe)

Ingredients:

8-oz. pkg Cream Cheese, softened
2 cups Sour Cream
3 cup Shredded Cheese (divided-reserving 1/2 for topping)
1/2 pkt. Fajita Seasoning (or Taco Seasoning if you don't have Fajita seasoning)
6 green onions, sliced (set one aside for garnish)
2 cans of chicken or 2-3 Cups shredded rotisserie chicken (I used Tyson) (I have also used one can successfully)
2 TBSP of Mild Taco Sauce
2-3 slices of Jalepeno's from a jar (diced finely)
2 tomatoes, chopped (optional)

*1 TBSP Chili Powder
*1 TSP Onion Powder
*1 TSP Garlic Powder

Directions:

Mix the cream cheese,sour cream, 1-1/2 cups of the shredded cheese,fajita seasoning,onion powder,garlic powder,chili powder, 5 onions, chicken,taco sauce and jalepeno's. Use a hand mixer to combine everything and that helps break up the chicken into a shredded texture. (you could also use rotisserie chicken,chicken breast shredded,etc)

After everything is mixed pour into an 8x11 glass baking dish (2 qt) and spread evenly.

Bake in oven at 375 degrees for 15 minutes or until heated through.

Remove from oven add remaining cheese mixture evenly to the top.
Place in oven or under broiler for about 2-3 minutes or until cheese is melted.
Top with tomatoes and remaining onion for garnish.

serve with tortilla chips, fritos scoops or crackers.
