Revised Broccoli Cheese Soup

Revised Broccoli Cheese Soup

 

Ingredients:
1 TBS Avacodo Oil
10 slices Thick Cut Bacon, diced
1 Tablespoon Fresh Minced Garlic
1 Medium Onion diced
1 tsp salt
1/2 tsp black pepper
2 TBS Mrs. Dash, Original
8 Cups Water 
5 tsp Better than Bouillon, chicken base
1 Cup Flour
1 1/4 C Whole Milk
6 American Cheese Slices (Kraft)
2 Broccoli 16oz bags frozen
1 Cup Fresh Parsley, chopped
Optional:  1 Cup Cheddar Cheese, shredded 

Directions:
1.  Add oil and coat pot, turn heat on medium high, add onions, garlic and bacon and saute in until cooked and translucent.

2. Combine Flour, Add Water.

2.  Stir constantly to avoid sticking.  Bring to a boil.  Then reduce to a simmer and then add Milk.

3. Add broccoli and simmer for 15 minutes more or until broccoli is tender but not mushy, add cheese and parsley, stir until cheese is melted. 

4.  Optional:  top with cheddar cheese


*Tip: Great Served with breadsticks & salad, Baked Potato or Italian Grilled Cheese Sandwiches.
