1. Season chicken breasts with Italian seasoning, salt and pepper, to taste.
2. Melt 1 tablespoon butter in a large skillet or pot over medium high heat. Add bacon pieces and garlic, toss to combine, add chicken breasts on top of bacon and garlic and cook both sides until done, set chicken aside in a plate.
3. Stir in tomato, canned tomatoes and chicken broth and flour. Whisk to ensure no lumps.
4. Add spinach, heavy whipping cream, parmesean cheese and crushed red pepper flakes. Reduce heat to simmer for 2 to 3 minutes until cheese is melted.
6. Add chicken back to the skillet and simmer in the sauce for 10-15 minutes, until chicken is cooked through. Add more seasoning with salt and pepper or parmesean if you need.
Pairs well with Mashed Potatoes and Asparagus or Green Beans!
