This makes 1 large sheet-pan pizza (or two mediums) so everyone is satisfied.
๐ฅ BEST CHOICE FOR 4 PEOPLE (if eating 2 slices each)
High-Protein Cottage Cheese Crust (Sheet Pan)
๐งพ INGREDIENTS (Crust)
1½ cups full-fat cottage cheese (16 oz container)
3 XL Eggs whole eggs
1 cup all-purpose flour (I used Self Rising)
(or self-rising — skip added salt if so)
2 tsp Salt (If not using self rising)
1½ tsp Italian seasoning
1½ tsp Basil
1 tsp Mrs Dash Original
1 tsp Mrs Dash Garlic Herb
2 tsp Garlic powder or to taste
INGREDIENTS: (SAUCE)
1 Cup Marinara Sauce (I used Raos)
INGREDIENTS/Toppings:
3 Cups Mozzerella, shredded
1/2 Medium Yellow Onion, diced
1/2 Green Bell Pepper, diced
1/4 Cup Mild Banana Peppers, diced
4 oz Can of Mushrooms.
(Mix all of the above ingredients together in a bowl)
12 Large Pepperoni.
๐ง INSTRUCTIONS
1. Blend cottage cheese + eggs+ seasonings until smooth. (I used my Ninja Blender on puree)
2. Add in flour gradually until batter is thick and spreadable (think thick pancake batter).
3. Line a sheet pan with parchment paper.
4. Spread batter evenly into a large thin rectangle.
5. Bake 425°F for 15–18 minutes (15 for me) until set and lightly golden.
6. Remove, poke gentle air holes with fork into crust.
7. Add sauce. Spread evenly across crust.
8. Top sauce with 2 Cups Mozzerella Cheese.
9. Add Pepperoni (mine were large so I cut them in half.
10. Add topping mixture of choice (onions, green peppers, banana peppers, mushrooms) on top of the pizza sauce evenly.
11. Top with the last 1 cup of Mozzerella Cheese.
12. Return to oven 8–12 minutes until bubbly. (Mine was where I liked it at about 10 minutes)
